Cubierto de espinas finas y puntiagudas. Su pulpa es blanca o amarillenta, de textura firme y carnosa, similar al chayote liso. Su sabor es suave y ligeramente dulce, con un toque mas herbal en comparaci\u00f3n con el chayote sin espinas.\u00a0 Se consume cocido, al vapor, frito o en sopas y guisos. Puede consumirse en ensaladas despu\u00e9s de ser cocido y pelado. Es rico en fibra, vitaminas como la C y B6, y minerales como el potasio.
